🌿 North Indian Style Veg Biryani Recipe 🍛

🔥 Serves: 4 to 6 people

🥘 Ingredients

🍚 4 bowls of basmati rice (washed & soaked in 8 bowls of water for 30 min)
🥔 2 large potatoes (chopped)
🧅 2 big onions (chopped)
🧄 6 to 8 garlic cloves
🌱 2-inch ginger
🌶️ 3 green chillies
🌿 1 tsp aniseed
🌶️ 1 tsp biryani masala
🧂 1 tsp garam masala
🧂 1 ½ tsp salt
🌿 5 cardamom seeds (powdered)
🧀 250g cottage cheese (paneer)
🟢 1 bowl of green peas
🌿 A little fresh coriander
🧈 2 tbsp butter
🍃 3 bay leaves
🌱 Some lentils
🟤 5 cloves
🖤 1 large black cardamom
⚫ 4 black pepper
🧡 4 pinches of orange food colour (mixed with water)
🥛 ½ bowl yoghurt
🌶️ 1 tsp Szechwan masala
🪔 1 soil lamp
💧 1 tsp Kewra water

👨‍🍳 Cooking Instructions

1. Grind ginger, garlic, fennel, and green chillies together.
2. Heat oil in a pressure cooker, and fry all raw spices until aromatic.
3. Add onions and sauté until light red.
4. Mix in biryani masala and sauté. Add the prepared paste and fry well.
5. Add salt, peas, paneer, and potatoes, then mix in butter & yoghurt and cook properly.
6. Add soaked rice with water, bring to a boil, then mix in cardamom powder.
7. Close the cooker and give 1 whistle on high flame, then turn off the gas.

🌬️ Let the cooker cool down. Meanwhile, prepare onion raita by mixing onion, curd, sugar, and salt.

1. Open the cooker, and mix in food colour & Kewra water.
2. Place a small bowl inside, add a heated soil lamp, pour ghee over it, and close the cooker for a few minutes for a smoky flavour.
